Ingredients
Scale
Lobster Tails
- 4 lobster tails
Seasoning & Marinade
- 1 teaspoon cajun seasoning
- 1 tablespoon extra virgin olive oil
Butter Sauce
- 2 tablespoons melted butter
- 2 tablespoons chopped fresh parsley
- 2 teaspoons freshly squeezed lemon juice
- 1/2 teaspoon cajun seasoning (from the remaining half)
Instructions
- Preheat the Grill: Heat the grill to medium heat, around 375 to 400 degrees Fahrenheit, ensuring it is properly heated before placing the lobster tails on.
- Prepare Lobster Tails: Using kitchen scissors, carefully cut down the back of each lobster shell until you reach the tail, but leave the base of the tail intact to keep the tail meat together.
- Loosen Lobster Meat: Gently pull back the shell slightly and use your fingers to separate the lobster meat from the shell, allowing it to rest on top of the shell.
- Prevent Curling: Insert a skewer from the top into the bottom part of the lobster tail to keep it straight and prevent it from curling while grilling.
- Season Lobster: Brush the lobster tails with extra virgin olive oil and sprinkle half of the cajun seasoning evenly over the tails.
- Prepare Butter Sauce: In a small bowl, combine melted butter, the remaining cajun seasoning, chopped fresh parsley, and freshly squeezed lemon juice. Stir thoroughly to blend the flavors.
- Grill Lobster – First Side: Place the lobster tails cut-side down on the grill and cook for 4 to 5 minutes until the shell starts to turn bright red.
- Flip and Brush: Flip the lobster tails over and brush them generously with the prepared butter sauce. Grill for an additional few minutes until the flesh is opaque and no longer translucent.
- Check Doneness: Use an instant-read thermometer to ensure the lobster meat has reached an internal temperature of 140 degrees Fahrenheit, indicating it is fully cooked.
- Serve: Remove the lobster tails from the grill and serve immediately, garnished with any remaining butter sauce or fresh parsley if desired.
Notes
- Try to source fresh lobster tails for the best flavor and texture, but frozen can work if properly thawed.
- If you don’t have a grill, you can broil the lobster tails in the oven on high for the same time periods.
- Use a skewer or toothpick to keep the lobster meat straight to ensure even cooking and attractive presentation.
- This dish pairs well with sides like grilled vegetables, rice pilaf, or a fresh green salad.
- Watch the lobster closely while grilling, as overcooking can make the meat tough and rubbery.
