Description

This Grilled Chicken with Peach Chipotle Sauce recipe features juicy, boneless chicken breasts grilled to perfection and glazed with a sweet and smoky peach chipotle sauce made from ripe peaches, chipotle pepper, honey, and vinegar. It’s a perfect balance of heat, sweetness, and tang, ideal for summer grilling and gatherings.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste

Peach Chipotle Sauce

  • 2 ripe peaches, pitted and chopped
  • 1 canned chipotle pepper in adobo sauce, minced
  • 1 tablespoon adobo sauce from the chipotle can
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh cilantro (optional, for garnish)

Instructions

  1. Preheat Grill: Preheat your grill to medium-high heat to ensure it’s hot and ready for cooking the chicken evenly.
  2. Prepare Chicken: Brush the chicken breasts with olive oil and season with salt and freshly ground black pepper generously to enhance flavor.
  3. Make Sauce: In a medium saucepan, combine chopped peaches, minced chipotle pepper, adobo sauce, honey, apple cider vinegar, and minced garlic.
  4. Simmer Sauce: Bring the mixture to a simmer over medium heat, stirring occasionally, and cook for about 10 minutes until the peaches break down and the sauce thickens.
  5. Grill Chicken: Place the chicken breasts on the hot grill and cook for 6-7 minutes per side or until the internal temperature reaches 165°F (74°C), ensuring the chicken is cooked through.
  6. Glaze Chicken: During the last few minutes of grilling, brush the chicken with the peach chipotle sauce, turning occasionally to form a flavorful glaze.
  7. Rest Chicken: Remove chicken from the grill and let it rest for a few minutes to allow juices to redistribute.
  8. Garnish and Serve: Garnish with freshly chopped cilantro if desired and serve with extra peach chipotle sauce on the side for dipping.

Notes

  • Use ripe peaches for the best natural sweetness in the sauce.
  • Adjust the amount of chipotle pepper to control the heat level.
  • Letting the chicken rest after grilling helps keep it juicy.
  • If grilling isn’t possible, you can cook the chicken under a broiler or on a stovetop grill pan.
  • The sauce can be made ahead and stored in the refrigerator for up to 3 days.
