Ingredients
Scale
Dough
- 1 cup active sourdough starter (fed and bubbly)
- 1 cup all-purpose flour
- ¼ cup warm water
- 2 tablespoons olive oil (plus extra for brushing)
- ½ teaspoon salt
- ½ teaspoon garlic powder
Topping
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon dried Italian herbs
- Coarse salt for topping (optional)
Instructions
- Prepare the dough: In a medium bowl, combine the sourdough starter, all-purpose flour, warm water, olive oil, salt, and garlic powder. Mix until a sticky dough forms. Knead lightly for 2–3 minutes until smooth.
- Let the dough rise: Cover the dough and let it rest at room temperature for 4–6 hours until it becomes puffy and slightly risen, developing flavor and texture.
- Preheat and prepare baking sheet: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and drizzle with olive oil to prevent sticking.
- Shape the dough: Transfer the rested dough onto the prepared baking sheet and gently press it into a rectangle about ½ inch thick.
- Add toppings: Brush the surface of the dough with olive oil. Evenly sprinkle mozzarella, cheddar, Parmesan cheeses, and dried Italian herbs over the top. Optionally, sprinkle coarse salt for extra crunch.
- Score the dough: Using a pizza cutter, lightly score the dough into breadstick shapes to make cutting easier after baking.
- Bake: Place the pan in the preheated oven and bake for 18–22 minutes, or until the breadsticks are golden brown and the cheese is bubbling.
- Cool and serve: Allow to cool slightly, then cut along the scored lines and serve the breadsticks warm for best flavor and texture.
Notes
- You can prepare the dough the night before and ferment it overnight in the fridge for enhanced flavor and convenience.
- Add crushed red pepper flakes to the cheese topping for a spicy kick.
- Feel free to swap cheeses according to your preference; for example, provolone or gouda make delicious alternatives.
- Brush extra olive oil after baking for a glossier finish if desired.
