Description

Indulge in a delightful Gluten-Free Peach Cobbler that perfectly balances sweet peaches with a golden, buttery topping. This easy-to-make dessert is a crowd-pleaser for any occasion.

Ingredients

Scale

Fruit Filling:

  • 6 cups fresh or frozen sliced peaches (peeled if fresh)
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Cobbler Topping:

  • 1 1/4 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1/4 cup almond flour
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter (cut into cubes)
  • 1/2 cup milk (dairy or dairy-free)
  • 1 large egg

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Prepare the fruit filling: In a large mixing bowl, combine peaches, 1/3 cup sugar, lemon juice, cornstarch, and vanilla. Transfer to a greased 9×9-inch baking dish.
  3. Make the cobbler topping: In a separate bowl, mix gluten-free flour, almond flour, 1/4 cup sugar, baking powder, and salt. Cut in cold butter until crumbly. Whisk milk and egg, then mix into dry ingredients to form a dough.
  4. Assemble and bake: Drop spoonfuls of dough over the peach filling. Bake for 35–40 minutes until golden and bubbly. Cool slightly before serving.

Notes

  • You can use canned peaches in juice if fresh or frozen are unavailable—just drain well and reduce sugar slightly.
  • For a dairy-free version, use vegan butter and almond or oat milk.
  • Serve warm with vanilla ice cream or whipped coconut cream.
