Ingredients
Scale
Carrots
- 2 pounds carrots, peeled and trimmed
Seasoning and Topping
- 2 tablespoons olive oil, plus a drizzle for breadcrumbs
- 2 cloves garlic, minced (or 1 teaspoon garlic powder)
- 1/3 cup grated Parmesan cheese
- 1/3 cup Panko breadcrumbs
- 1 teaspoon Italian seasoning or 1 tablespoon chopped fresh herbs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh chopped parsley (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Prepare Carrots: Peel and trim the carrots, slicing thicker carrots in half lengthwise so they cook evenly during roasting.
- Season Carrots: Arrange the carrots on the baking sheet, then drizzle with olive oil. Sprinkle minced garlic (or garlic powder), Italian seasoning, salt, and black pepper over the carrots, tossing gently to coat evenly with the seasoning.
- Roast Carrots: Place the baking sheet in the oven and roast the carrots for 20–25 minutes, until they become tender and start to caramelize at the edges.
- Prepare Breadcrumb Mixture: While the carrots roast, combine the Panko breadcrumbs, grated Parmesan, and a drizzle of olive oil in a small bowl, mixing to combine well.
- Add Topping: Remove the roasted carrots from the oven and evenly sprinkle the breadcrumb and Parmesan mixture over the top of the carrots.
- Final Roasting: Return the baking sheet to the oven and roast for an additional 5–7 minutes, or until the topping is golden brown and crispy.
- Garnish and Serve: Remove from the oven, garnish with fresh chopped parsley, and serve the garlic Parmesan roasted carrots warm as a perfect side dish.
Notes
- For an extra garlic flavor, use fresh minced garlic instead of garlic powder.
- Adjust the amount of Parmesan and breadcrumbs based on desired crispiness and cheesiness.
- You can substitute Italian seasoning with fresh herbs like thyme, rosemary, or oregano.
- Try adding a squeeze of lemon juice before serving for a bright citrus note.
- To make it vegan, use nutritional yeast instead of Parmesan and a vegan breadcrumb option.
