- 1 cup long-grain white rice
- 2 1/4 cups chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons chopped fresh parsley, optional, for garnish
Instructions
- Season the Chicken: Season the chicken pieces with salt and pepper.
- Cook the Chicken: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chicken and cook for 6 to 8 minutes until browned and cooked through. Remove chicken and set aside.
