Chicken:
- 6 boneless, skinless chicken thighs
Miso Marinade:
- 2 tablespoons white miso paste
- 1 tablespoon soy sauce
- 1 tablespoon mirin (or rice vinegar)
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 4 garlic cloves (minced)
- 1 teaspoon grated fresh ginger
- 1/4 teaspoon black pepper
Garnish:
- Chopped green onions and sesame seeds for garnish (optional)
Instructions
- Miso Marinade: In a medium bowl, whisk together miso paste, soy sauce, mirin, sesame oil, honey, garlic, ginger, and black pepper until smooth.
- Marinating: Add chicken thighs to the marinade, toss to coat, cover, and refrigerate for 30 minutes to 4 hours.
- Preheat Air Fryer: Set air fryer to 380°F (193°C) and lightly grease the basket.
- Cooking: Place marinated chicken in a single layer in the basket. Air fry for 16–18 minutes, flipping halfway, until golden and internal temp reaches 165°F (74°C).
- Rest and Serve: Let the chicken rest, then garnish with green onions and sesame seeds before serving.

- For crispier edges, increase temp to 400°F for the last 2 minutes.
