Steak and Potatoes

  • 1 lb. Yukon Gold potatoes, diced into ½-inch cubes (or red-skinned or fingerling potatoes)
  • 1½ lbs. sirloin steak, cut into 1-inch cubes (or beef tenderloin, NY strip steak, or stir fry meat)

Seasonings and Butter

  • 1 tbsp olive oil
  • 4 tbsp unsalted butter, divided (½ stick)
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • ½ tsp kosher salt
  • ½ tsp ground pepper
  • Freshly chopped parsley (optional, for garnish)


Instructions

  1. Heat the skillet: Heat a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter, allowing the butter to melt completely.
  2. Cook the potatoes: Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper to the skillet. Cook undisturbed for about 4 minutes, then stir and continue cooking for an additional 3-4 minutes, or until the potatoes are fork tender. Remove the potatoes from the pan and set them aside in a bowl.
  3. Cook the steak bites: Return the skillet to the stove and increase the heat to high. Add the remaining 2 tablespoons of butter and stir to melt. Place the steak cubes in a single layer in the skillet and cook for 1 minute without moving. Flip or stir the steak bites and cook for another 1-2 minutes until they reach your preferred doneness. Remove the skillet from heat.
  4. Toss potatoes and steak: Add the cooked potatoes back into the skillet with the steak bites and gently toss everything together. Adjust salt and pepper as needed.
