Pecan Filling:

- 1/2 cup brown sugar

Additional Ingredients:
- 1 package refrigerated pie crusts (2 crusts), softened
- All-purpose flour for dusting

Instructions
- Pecan Filling: In a medium bowl, combine pecans, corn syrup, brown sugar, melted butter, vanilla extract, salt, and beaten egg. Set aside.
- Prepare Dough: Roll out pie crusts on a floured surface. Cut out circles, spoon filling onto each circle, fold over, and seal edges.
- Fry Pies: Heat oil to 350°F (175°C). Fry pies in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
- Serve: Dust with powdered sugar if desired. Serve warm.
