- 2 large cucumbers, thinly sliced

Peanut Sauce
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon lime juice
- 2 teaspoons honey
- 1–2 teaspoons sriracha (to taste)
- 1 teaspoon toasted sesame oil
- 1 garlic clove, minced
- 1 teaspoon grated fresh ginger
Toppings
- 2 tablespoons chopped roasted peanuts
- 1 tablespoon chopped fresh cilantro (optional)
Instructions
- Draw out moisture from cucumbers: Place the thinly sliced cucumbers in a colander and sprinkle with salt. Let them sit for 15–20 minutes to draw out excess moisture. Afterward, pat them dry thoroughly with paper towels to avoid a watery salad.
- Prepare the peanut sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, lime juice, honey, sriracha, toasted sesame oil, minced garlic, and grated fresh ginger until you get a smooth, consistent sauce. If the mixture is too thick, add a splash of water, a little at a time, until you achieve your desired consistency.
- Toss cucumbers with sauce: Add the dried cucumber slices to the bowl with peanut sauce and toss well until all slices are evenly coated with the flavorful dressing.
- Serve: Transfer the coated cucumbers to a serving dish. Sprinkle with chopped roasted peanuts and fresh cilantro if desired. Serve immediately for the freshest taste, or chill for 15–30 minutes to allow the flavors to meld and enhance.
Notes
- For added crunch and smaller slices, use Persian or English cucumbers instead of large ones.
- Adjust the heat level by adding more or less sriracha according to your taste preferences.
