  • 1 can (4 oz) diced green chiles

  • 1/2 cup frozen corn
  • 4 oz cream cheese (cubed and softened)
  • 1/2 cup sour cream
  • salt and black pepper to taste

For Serving:

  • Chopped fresh cilantro
  • Lime wedges


Instructions

  1. Prepare the Chicken: Heat olive oil in a large pot over medium heat. Add cubed chicken and cook until browned and cooked through. Remove chicken and set aside.
  2. Sauté Vegetables: In the same pot, sauté onion and green bell pepper until soft. Add garlic, Cajun seasoning, cumin, paprika, and cayenne, stirring until fragrant.
  3. Cook the Chili: Return the chicken to the pot, then add white beans, green chiles, chicken broth, and corn. Simmer for 10–15 minutes. Reduce heat and stir in cream cheese until melted. Add sour cream and season with salt and pepper.
  4. Serve: Let the chili warm through for another 5 minutes. Serve hot, garnished with cilantro and lime wedges.
