- 1/2 cup ripe avocado (smushed into cup to measure, approx. 1/2 medium avocado)
- 3 tbsp extra virgin olive oil
- 3 tbsp sour cream or yogurt (Greek or plain, unsweetened) – OPTIONAL
- 2 tbsp lemon juice
- 1 small garlic clove, minced using garlic crusher
- 4 tbsp water (to thin out the dressing)
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Combine Ingredients. Place all ingredients into a Nutribullet or small food processor and blitz until smooth and creamy, ensuring all components are fully blended for the best texture.
- Adjust Consistency. Add water gradually to thin the dressing to a pourable consistency, avoiding a gloopy or overly thick texture.
- Season to Taste. Taste the dressing and adjust salt, pepper, lemon juice, or olive oil as needed to balance flavors perfectly.
- Store and Use. Use immediately as a salad dressing or refrigerate. It keeps fresh for up to 3 days without browning; see notes for longer storage tips.
