Scale
Soup Ingredients
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 1/2 pounds fresh asparagus, trimmed and chopped
- 4 cups low-sodium vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1 tablespoon lemon juice
Garnish (Optional)
- Chopped fresh herbs (like chives or parsley)
Instructions
- Sauté Aromatics: In a large pot, heat the olive oil and unsalted butter over medium heat. Add the chopped onion and sauté for 4–5 minutes until it becomes soft and translucent, releasing its sweet aroma. Then stir in the minced garlic and cook for an additional minute to develop flavor without burning.
- Cook Asparagus: Add the chopped asparagus to the pot along with the low-sodium vegetable broth, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 15–20 minutes until the asparagus is very tender and easily pierced with a fork.
- Blend Soup: Remove the pot from heat. Carefully blend the soup until smooth using an immersion blender directly in the pot, or transfer the soup in batches to a countertop blender. Ensure the soup is uniformly creamy without lumps.
- Finish Soup: Stir in the heavy cream and lemon juice to add richness and a bright finish. Taste the soup and adjust the seasoning with additional salt or pepper if needed.
- Reheat and Serve: Gently reheat the soup if it has cooled down. Serve warm, garnished with chopped fresh herbs such as chives or parsley for an extra pop of color and flavor.
Notes
- For a dairy-free variation, substitute the heavy cream with full-fat coconut milk or unsweetened almond milk to maintain creaminess without dairy.
- Reserve a few asparagus tips before cooking to lightly steam them and use as an elegant garnish on top of the soup.
- Use low-sodium broth to control the salt content and customize seasoning according to your preference.
