Description

Indulge in the ultimate chocolate experience with these decadent Chocolate Lava Brownie Cookies. A rich, gooey center surrounded by a chewy brownie cookie – pure bliss in every bite!

Ingredients

Scale

Brownie Cookie Dough:

  • 1/2 cup unsalted butter
  • 1 1/2 cups semi-sweet chocolate chips (divided)
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

Filling:

  • 12 chocolate truffles or chocolate chunks

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Melt Chocolate: In a microwave-safe bowl, melt the butter and 1 cup of chocolate chips in 30-second intervals until smooth. Let cool slightly.
  3. Prepare Wet Ingredients: In a large bowl, whisk eggs, granulated sugar, brown sugar, and vanilla until thick and pale. Slowly mix in the melted chocolate.
  4. Combine Dry Ingredients: In a small bowl, whisk flour, cocoa powder, baking powder, and salt. Stir into wet mixture until combined.
  5. Add Chocolate Chips: Fold in remaining chocolate chips. Scoop dough, place a chocolate truffle in the center, cover with more dough, and shape into a ball.
  6. Bake: Place on baking sheet and bake for 10–12 minutes until edges are set but centers are soft.
  7. Cool and Serve: Let cool on the sheet for 5 minutes before transferring to a wire rack. Serve warm for a gooey center.

Notes

  • For extra richness, use dark chocolate chips.
  • You can chill the dough for 30 minutes if it’s too sticky.
  • Best enjoyed warm; leftovers can be reheated in the microwave for 10 seconds.
