Description

This Cowboy Casserole recipe is a hearty and comforting dish that combines ground beef, creamy sauce, corn, and crispy tater tots, all baked together with a cheesy topping. Perfect for a cozy family dinner or potluck gathering.

  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced

Casserole Layers:

  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 1 can (15 oz) whole kernel corn, drained
  • 1 bag (28–30 oz) frozen tater tots
  • Chopped parsley (optional, for garnish)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Cook Ground Beef: In a skillet, cook ground beef, onion, and garlic until browned. Season with salt, pepper, and paprika.
  3. Combine Ingredients: Stir in mushroom soup, sour cream, 1/2 cup cheddar cheese, and corn. Transfer to a baking dish.
  4. Add Tater Tots: Arrange tater tots on top of the beef mixture.
  5. Bake: Bake for 35–40 minutes until tater tots are crispy. Add remaining cheese and bake for 5 more minutes.
  6. Serve: Let cool slightly, garnish with parsley, and serve.
