Scale
Doughnut Puff Batter:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup whole milk
- 1 large egg
- 1 tablespoon unsalted butter, melted
- 1 teaspoon vanilla extract
For Frying and Coating:
- Vegetable oil (for frying)
- 1/2 cup sweetened condensed milk (for drizzling)
- 1/4 cup granulated sugar (for coating)
- 1 teaspoon ground cinnamon (for coating)
Instructions
- Doughnut Puff Batter: In a medium bowl, whisk together the flour, baking powder, salt, 1/4 cup sugar, and 1/2 teaspoon cinnamon. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until well combined. Add the wet ingredients to the dry ingredients and stir just until a thick batter forms.
- Frying: Heat about 2 inches of vegetable oil in a deep pot over medium heat to 350°F (175°C). Using a small cookie scoop or spoon, carefully drop small portions of batter into the hot oil, frying in batches. Fry for 2–3 minutes per side or until golden brown and puffed. Remove with a slotted spoon and drain on paper towels.
- Coating: In a shallow bowl, mix 1/4 cup sugar with 1 teaspoon cinnamon. Roll the warm puffs in the cinnamon sugar to coat.
- Serving: Drizzle generously with sweetened condensed milk just before serving.
Notes
- Serve immediately for the best texture.
- You can warm the condensed milk slightly for easier drizzling.
- These are best eaten fresh but can be reheated briefly in the oven.
