Egg Wash

  • 1 egg, beaten
  • 1 tablespoon milk

Instructions

  1. Prepare the pie dough: In a large bowl, whisk together the flour, salt, and sugar. Cut in the cold, cubed butter using a pastry cutter or your hands until the mixture resembles coarse crumbs. Gradually add ice water, mixing gently until the dough holds together. Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
  2. Preheat the oven: Set the oven to 425°F (220°C) to prepare for baking.
  3. Make the apple filling: In a separate large bowl, toss the sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract until well combined.
  4. Roll out the bottom crust: On a lightly floured surface, roll out one disc of chilled dough into a circle slightly larger than your 9-inch pie dish. Transfer it carefully to the pie dish, gently pressing it to fit without stretching.
