Lemon Glaze

  • 1 cup powdered sugar
  • juice of 1/2 fresh lemon
  • 4 large lemons (for extra zest and garnish or additional juice if needed)
  • 5 egg yolks, slightly mixed
  • 1/2 cup butter
  • 1 cup sugar


Instructions

  1. Prepare the Cookie Dough: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the vanilla extract, lemon juice, lemon zest, and a dash of salt, mixing until well combined. Gradually incorporate the all-purpose flour into the wet ingredients, mixing just until a dough forms. Avoid overmixing to keep the cookies tender.
  2. Shape and Bake the Cookies: Preheat your oven to 350°F (175°C). Roll the dough into 24 equal sized balls and place them on a baking sheet lined with parchment paper, spaced about 2 inches apart.
