Ingredients
Scale
Chicken
- 3-4 boneless, skinless chicken breasts (1.5-2 lbs)
Marinade
- 1/2 cup fresh lime juice (about 3 limes)
- 1 cup chopped fresh cilantro
- 4 garlic cloves, minced
- 1 cup low-sodium chicken broth
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Gather ingredients: Chop the fresh cilantro, mince the garlic cloves, and juice the limes to prepare for the marinade.
- Season chicken: Sprinkle salt and pepper evenly over the chicken breasts and place them into the crockpot in a single layer.
- Mix marinade: In a separate bowl, combine the fresh lime juice, minced garlic, chopped cilantro, cumin, and low-sodium chicken broth, stirring well to blend the flavors.
- Cook: Pour the marinade over the chicken in the crockpot, cover, and cook on low for 6 hours or on high for 3 hours, allowing the chicken to become tender and flavorful.
- Shred chicken: Once cooked, remove the chicken breasts, shred them using two forks, and return the shredded chicken to the crockpot to soak up the juices.
- Serve: Serve the shredded cilantro lime chicken over rice or use it as a filling for tacos, garnishing with additional fresh cilantro if desired.
Notes
- For best flavor, use freshly squeezed lime juice.
- Low-sodium chicken broth helps control salt levels but adjust seasoning as needed.
- Chicken can also be cooked on high for 3 hours if time is limited.
- Leftovers store well in the refrigerator for up to 3 days.
- Can be frozen for up to 3 months in an airtight container.
