Ingredients
Scale
Dry Ingredients
- ½ cup chia seeds
- ¼ cup cocoa powder
Wet Ingredients
- 2 cups milk (oat, almond, cashew, or coconut)
- 4 tablespoons sweetener (honey, pure maple syrup, or monk fruit)
- 1 teaspoon vanilla extract
Toppings
- ½ cup raspberries or strawberries
- Shredded coconut (unsweetened), quantity as desired
- Chocolate shavings, quantity as desired
Instructions
- Combine Ingredients. In a large mixing bowl, whisk together the milk, cocoa powder, sweetener, and vanilla extract until fully incorporated and smooth.
- Add Chia Seeds. Stir in the chia seeds thoroughly, ensuring they are evenly distributed throughout the mixture.
- Initial Rest and Stir. Let the pudding sit at room temperature for 5 minutes, then stir again to prevent chia seeds from clumping.
- Second Stir. Allow the mixture to sit for another 10 minutes and give it one more good stir to ensure an even, pudding-like texture.
- Chill in Fridge. Divide the pudding equally into four 6-ounce containers and refrigerate for at least 2 hours or up to overnight, allowing the chia seeds to fully absorb the liquid and form a creamy pudding.
- Serve and Garnish. Before serving, give the pudding another good stir to smooth it out, then top with fresh raspberries or strawberries, shredded unsweetened coconut, and chocolate shavings for added texture and flavor. Enjoy!
