These Chili Lime Chickpea Cauliflower Wraps are a delicious and nutritious meal option. Roasted cauliflower and chickpeas seasoned with chili, lime, and spices are wrapped in a tortilla with avocado, cilantro, and yogurt for a flavorful fusion dish.
Ingredients
Roasted Cauliflower and Chickpeas:
1 tablespoon olive oil, 1 small head of cauliflower (cut into small florets), 1 can (15 oz) chickpeas (drained and rinsed), 1 teaspoon chili powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon cumin, 1/4 teaspoon cayenne pepper (optional for heat), juice of 1 lime, salt and pepper to taste.
Wraps:
4 large tortillas or wraps, 1 avocado (sliced), 1/4 cup chopped fresh cilantro, 1/4 cup red onion (thinly sliced), 1/2 cup shredded lettuce or cabbage, 1/4 cup dairy-free or regular yogurt or sour cream (optional for serving)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the cauliflower florets and chickpeas with olive oil, chili powder, smoked paprika, cumin, cayenne pepper, salt, and pepper.
- Spread the mixture on the baking sheet and roast for 25–30 minutes, stirring halfway.
- Remove from oven and squeeze fresh lime juice over the roasted mixture.
- Warm the tortillas in a dry skillet or microwave.
- To assemble the wraps, layer the roasted cauliflower and chickpeas onto each tortilla, then top with avocado slices, cilantro, red onion, and shredded lettuce or cabbage.
- Add yogurt or sour cream if desired. Roll up the wraps tightly and serve immediately.
Notes
- For extra flavor, add a drizzle of hot sauce or hummus before wrapping.
- You can swap out the chickpeas for black beans or add grilled tofu for more protein.
