Description

These Chili Lime Chickpea Cauliflower Wraps are a delicious and nutritious meal option. Roasted cauliflower and chickpeas seasoned with chili, lime, and spices are wrapped in a tortilla with avocado, cilantro, and yogurt for a flavorful fusion dish.

Roasted Cauliflower and Chickpeas:

1 tablespoon olive oil, 1 small head of cauliflower (cut into small florets), 1 can (15 oz) chickpeas (drained and rinsed), 1 teaspoon chili powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon cumin, 1/4 teaspoon cayenne pepper (optional for heat), juice of 1 lime, salt and pepper to taste.

Wraps:

4 large tortillas or wraps, 1 avocado (sliced), 1/4 cup chopped fresh cilantro, 1/4 cup red onion (thinly sliced), 1/2 cup shredded lettuce or cabbage, 1/4 cup dairy-free or regular yogurt or sour cream (optional for serving)


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cauliflower florets and chickpeas with olive oil, chili powder, smoked paprika, cumin, cayenne pepper, salt, and pepper.
  3. Spread the mixture on the baking sheet and roast for 25–30 minutes, stirring halfway.
  4. Remove from oven and squeeze fresh lime juice over the roasted mixture.
  5. Warm the tortillas in a dry skillet or microwave.
  6. To assemble the wraps, layer the roasted cauliflower and chickpeas onto each tortilla, then top with avocado slices, cilantro, red onion, and shredded lettuce or cabbage.
  7. Add yogurt or sour cream if desired. Roll up the wraps tightly and serve immediately.

Notes

  • For extra flavor, add a drizzle of hot sauce or hummus before wrapping.
  • You can swap out the chickpeas for black beans or add grilled tofu for more protein.
