  • 3 chipotle peppers in adobo sauce (chopped)
  • 1 teaspoon adobo sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1 (15-ounce) can fire-roasted diced tomatoes
  • 1/2 cup chicken broth
  • 3 cups cooked shredded chicken (rotisserie or poached)
  • Salt and pepper to taste

Optional Toppings:

  • Sliced avocado
  • Chopped cilantro
  • Diced onions
  • Queso fresco
  • Lime wedges

Instructions

  1. Prepare the Sauce: Heat olive oil in a skillet, sauté onions until caramelized. Add garlic, chipotle peppers, adobo sauce, oregano, cumin, tomatoes, and chicken broth. Simmer for 5 minutes.
  2. Blend the Sauce: Use an immersion blender to blend the sauce until smooth.
  3. Combine with Chicken: Return the sauce to the skillet, add shredded chicken, simmer for 5-10 minutes.
  4. Season and Serve: Season with salt and pepper, serve with tortillas and desired toppings.
