Description

This Chicken Fried Rice recipe is a quick and flavorful dish combining tender shredded chicken, fluffy white rice, mixed vegetables, and scrambled eggs, all stir-fried in sesame oil and seasoned with soy sauce. Perfect for a satisfying weeknight meal, it’s a delicious way to enjoy classic Asian-inspired flavors with simple ingredients.

Ingredients

Scale

Vegetables

  • ½ cup onion (diced)
  • ½ cup carrots (diced)
  • ½ cup frozen peas (no need to thaw)

Main Ingredients

  • 2 tablespoons sesame oil (or vegetable oil)
  • 3 cups cooked white rice
  • 2 cups cooked chicken (shredded)
  • 2 eggs

Seasonings & Others

  • 3 tbsp soy sauce
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Heat the pan and sauté vegetables: Heat a large frying pan or wok over medium heat. Add the sesame oil, diced onions, and diced carrots; sauté until the carrots and onions are starting to become tender, about 3-5 minutes.
  2. Add peas: Add the frozen peas directly to the pan and stir well, cooking for another 2 minutes until peas are heated through.
  3. Scramble the eggs: In a small bowl, beat the eggs with a fork. Push the vegetable mixture to one side of the pan, then pour the beaten eggs onto the other side. Use a spatula to scramble the eggs gently until fully cooked, then mix the eggs into the sautéed vegetables.
  4. Add rice and chicken: Add the cooked white rice and shredded cooked chicken to the pan. Mix thoroughly to combine all ingredients evenly.
  5. Season with soy sauce: Pour the soy sauce over the rice mixture and stir well to distribute flavor uniformly throughout the dish.
  6. Melt in butter: Add the tablespoon of butter and stir the rice continuously until the butter is fully melted and incorporated.
  7. Season and adjust: Taste the fried rice and season with salt and pepper as desired for balance.
  8. Serve: Serve the chicken fried rice hot, ideally accompanied by yum-yum sauce or your favorite dipping sauce.

Notes

  • For best results, use day-old cooked rice as it tends to fry better without becoming mushy.
  • Feel free to substitute chicken with shrimp or tofu for variation.
  • Add additional vegetables such as bell peppers or bean sprouts according to preference.
  • Adjust soy sauce quantity to control saltiness.
  • Using sesame oil imparts a delicious nutty flavor but vegetable oil works fine as a substitute.
  • For a spicier version, add a dash of chili flakes or sriracha.
