Quesadilla Ingredients
- 4 large flour tortillas
- 1 pound ground sausage
- 2 cups shredded Colby Jack cheese
- 6 eggs
- 1/2 cup milk
- Salt and pepper to taste
For Serving
- Sliced green onions (garnish)
- Salsa (for serving)
- Sour cream (for serving)
Instructions
- Cook the sausage: In a skillet over medium heat, cook the ground sausage until browned and fully cooked. Drain any excess grease and set aside.
- Prepare the egg mixture: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Scramble the eggs: Using the same skillet, scramble the egg mixture over medium heat until just set. Remove from heat.
- Heat skillet for quesadillas: Clean the skillet and heat it over medium heat to prepare for grilling the quesadillas.
- Assemble the quesadillas: Lay out the tortillas flat. On one half of each tortilla, evenly spread the scrambled eggs, top with cooked sausage, and sprinkle with shredded Colby Jack cheese.
- Fold the tortillas: Fold the other half of the tortilla over the filling, creating a half-moon shape.
- Cook the quesadillas: Place one folded quesadilla at a time in the heated skillet. Cook for 2-3 minutes on each side until the tortilla is golden brown, crispy, and the cheese inside has melted.
- Slice and serve: Transfer cooked quesadillas to a cutting board and allow to cool slightly. Slice into wedges.
- Garnish and enjoy: Serve warm with salsa, sour cream, and garnish with sliced green onions.
Notes
- Use medium heat to avoid burning the tortillas before the cheese melts.
- Drain excess grease from sausage to prevent soggy tortillas.
- You can substitute Colby Jack cheese with cheddar or Monterey Jack if preferred.
- For a spicier kick, add jalapeños or hot sauce.
- Make sure the eggs are just set, not overcooked, for creamy texture inside the quesadilla.
