  • 2 cans (15 oz each) white beans such as cannellini or great northern (drained and rinsed)
  • 3 cups low-sodium vegetable or chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • zest and juice of 1 lemon
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach or chopped kale
  • fresh parsley (chopped, for garnish)
  • extra Parmesan and lemon wedges (for serving)


Instructions

  1. Heat olive oil: In a large pot over medium heat, heat olive oil. Add chopped onion and cook until translucent.
  2. Add garlic and seasonings: Stir in garlic and red pepper flakes, cook until fragrant.
  3. Combine beans and broth: Add white beans, broth, salt, and pepper. Simmer for 10–12 minutes.
  4. Stir in lemon and Parmesan: Add lemon zest, lemon juice, and Parmesan cheese. Stir until creamy.
  5. Add greens: Mix in spinach until wilted.
