Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the cookies.
- Prepare baking sheets: Line two baking sheets with parchment paper or silicone baking mats to prevent sticking.
- Mix dry ingredients: In a medium bowl, whisk together cake flour, baking powder, and salt; set aside for later use.
- Cream butter and sugar: Using an electric mixer on medium-high speed, beat the room temperature butter and granulated sugar until the mixture becomes pale and fluffy, about 3 minutes.
- Add wet ingredients: Incorporate the egg white, heavy cream, and vanilla extract into the butter-sugar mixture; beat until fully combined.
- Combine flour mixture: Reduce mixer speed to low and gradually add the dry flour mixture in three additions, mixing until incorporated. Scrape down the sides of the bowl as needed to ensure even mixing.
- Form cookie dough balls: Using about 1 heaping tablespoon of dough at a time, roll into balls and place on the prepared baking sheets, spaced about 2 inches apart.
- Shape cookies: Gently press down the tops of each dough ball slightly with your hands to flatten them just a bit.

- Make frosting: Whisk cocoa powder, powdered sugar, and vanilla extract into the melted chocolate mixture until smooth. The frosting should have the texture of thick brownie batter and reach around 95°F (35°C).
- Flip cookies: Turn the cooled cookies over so the flat side is facing up on the baking sheet.
- Frost cookies: Spoon about 2 tablespoons of the chocolate frosting onto the flat side of each cookie, forming a mound.
- Set frosting: Let the cookies sit at room temperature for about 3 hours until the frosting is set and firm.
- Store cookies: Place the cookies in an airtight container and store at room temperature for up to 3 days.
