These Basic Cauliflower Fritters are a delicious and easy-to-make vegetarian appetizer. Instructions
- Cook the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5 minutes, or until fork-tender. Drain well and pat dry with paper towels to remove excess moisture.
- Mash the Cauliflower: Transfer the cooked cauliflower to a large bowl and mash it with a fork or potato masher until mostly broken down, leaving some small chunks for texture.
- Prepare the Batter: Stir in the eggs, flour, grated Parmesan cheese, finely chopped green onions, minced garlic, salt, and black pepper until the mixture is well combined and forms a batter.
- Heat the Oil: Heat the olive oil in a large nonstick skillet over medium heat to ensure the fritters will cook evenly and become crispy.
- Fry the Fritters: Scoop about 2 tablespoons of the batter per fritter and drop them into the hot pan. Flatten them slightly with a spatula to form round patties. Cook each side for 3–4 minutes until golden brown and crisp.
- Drain and Serve: Transfer the cooked fritters to a paper towel-lined plate to absorb any excess oil. Repeat frying with the remaining batter. Serve the fritters warm with your choice of dipping sauces or accompaniments.
