Description

These Basic Cauliflower Fritters are a delicious and easy-to-make vegetarian appetizer. Made from tender cauliflower mashed and combined with Parmesan cheese, eggs, and spices, then pan-fried to a golden crisp, they offer a satisfying snack or starter. Perfect for low-carb and veggie lovers alike, they’re quick to prepare and pair well with dips like sour cream, yogurt, or a spicy sauce.

Ingredients

Scale

Vegetables

  • 1 medium head cauliflower (cut into florets)
  • 2 green onions (finely chopped)
  • 2 garlic cloves (minced)

Other Ingredients

  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2–3 tablespoons olive oil (for frying)

Instructions

  1. Cook the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5 minutes, or until fork-tender. Drain well and pat dry with paper towels to remove excess moisture.
  2. Mash the Cauliflower: Transfer the cooked cauliflower to a large bowl and mash it with a fork or potato masher until mostly broken down, leaving some small chunks for texture.
  3. Prepare the Batter: Stir in the eggs, flour, grated Parmesan cheese, finely chopped green onions, minced garlic, salt, and black pepper until the mixture is well combined and forms a batter.
  4. Heat the Oil: Heat the olive oil in a large nonstick skillet over medium heat to ensure the fritters will cook evenly and become crispy.
  5. Fry the Fritters: Scoop about 2 tablespoons of the batter per fritter and drop them into the hot pan. Flatten them slightly with a spatula to form round patties. Cook each side for 3–4 minutes until golden brown and crisp.
  6. Drain and Serve: Transfer the cooked fritters to a paper towel-lined plate to absorb any excess oil. Repeat frying with the remaining batter. Serve the fritters warm with your choice of dipping sauces or accompaniments.

Notes

  • For a gluten-free version, substitute all-purpose flour with almond flour.
  • These fritters pair wonderfully with sour cream, yogurt dip, or a drizzle of hot sauce for added flavor.
  • Leftovers can be reheated effectively in a skillet or air fryer to regain crispiness.
