Marinade:
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- 3 garlic cloves, minced
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: pinch of red pepper flakes
Chicken:
- 1 to 1.5 pounds boneless, skinless chicken breasts or thighs
Instructions
- In a medium bowl or resealable plastic bag, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, minced garlic, basil, oregano, salt, pepper, and red pepper flakes if using.
- Add the chicken to the marinade and toss to coat evenly.
- Cover or seal and refrigerate for at least 30 minutes, or up to 8 hours for best flavor.
- When ready to cook, remove the chicken from the marinade and grill, bake, or sauté until fully cooked and internal temperature reaches 165°F.
- Discard any remaining marinade.
- Let the chicken rest for a few minutes before serving.
