  • 4 brioche or soft sandwich buns
  • 1 tablespoon olive oil
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 4 large eggs
  • 1 teaspoon za’atar seasoning
  • Salt and pepper, to taste
  • Optional fresh herbs (parsley or dill) for garnish


Instructions

  1. Preheat and prepare buns: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. Slice the tops off the buns and carefully scoop out a small amount of the center to create space for the filling.
