Description

This Bacon Grilled Cheese recipe combines crispy thick-cut bacon with layers of American and cheddar cheese on toasted sourdough bread, enhanced with a creamy mayonnaise spread and a parmesan cheese finish. Perfectly cooked on a cast iron pan for a golden, melty, and satisfying sandwich, ideal for a comforting meal served with tomato soup.

Ingredients

Scale

Bread and Spread

  • 8 slices sourdough sandwich bread
  • 4 tablespoons mayonnaise

Cheeses

  • 8 slices American cheese
  • 8 slices cheddar cheese
  • 3 tablespoons grated parmesan cheese

Bacon

  • 12 slices thick-cut bacon, cooked

Instructions

  1. Prepare the bread and pan: Spread ½ a tablespoon of mayonnaise on one side of each slice of sourdough bread. Heat a cast iron pan or griddle over medium-low heat to ensure even cooking without burning the bread.
  2. Assemble the sandwich: Place one slice of bread mayo side down on the heated pan. Layer 2 slices of American cheese, then tear 3 cooked bacon slices in half and evenly distribute them over the cheese. Add 2 slices of cheddar cheese on top and then place the second slice of bread mayo side up over the layers to complete the sandwich.
  3. Cook the sandwich: Cook the sandwich for 3 to 4 minutes on each side until the bread is nicely golden brown and crispy and the cheese is melted. Carefully flip the grilled cheese and continue cooking for another 3 to 4 minutes on the other side.
  4. Finish and serve: Remove the sandwich from the pan and set it aside. Repeat the process with the remaining bread and cheese to make additional sandwiches. Sprinkle both sides of the grilled cheese sandwiches with the grated parmesan cheese. Serve hot, ideally paired with tomato soup, and enjoy the delicious melty cheese and smoky bacon flavor.

Notes

  • Use medium-low heat to prevent burning the bread while ensuring the cheese melts thoroughly.
  • Cooking the bacon in advance saves time and ensures it’s crispy when assembled.
  • For extra flavor, you can add a pinch of black pepper or garlic powder to the mayo before spreading.
  • Parmesan adds a savory crunch when sprinkled on the outside; feel free to omit if preferred.
  • This sandwich pairs wonderfully with tomato soup or a simple side salad for a complete meal.
