Description

  • 1/4 cup chopped roasted peanuts

Peanut Dressing:

  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1 garlic clove, minced
  • 1–2 tablespoons warm water to thin

Instructions

  1. Main Salad: In a large mixing bowl, combine the chicken, cabbage, carrots, bell pepper, green onions, cilantro, and peanuts.
  2. Peanut Dressing: In a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, lime juice, sesame oil, and garlic until smooth. Add water 1 tablespoon at a time to reach your desired dressing consistency.
  3. Pour the peanut dressing over the salad and toss to coat everything evenly.
  4. Garnish with extra peanuts, sesame seeds, or more cilantro if desired.
