- 1/4 cup chopped roasted peanuts
- Optional: 1 tablespoon sesame seeds
Peanut Dressing:
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
- 1 garlic clove, minced
- 1–2 tablespoons warm water to thin
Instructions
- Main Salad: In a large mixing bowl, combine the chicken, cabbage, carrots, bell pepper, green onions, cilantro, and peanuts.
- Peanut Dressing: In a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, lime juice, sesame oil, and garlic until smooth. Add water 1 tablespoon at a time to reach your desired dressing consistency.
- Pour the peanut dressing over the salad and toss to coat everything evenly.
- Garnish with extra peanuts, sesame seeds, or more cilantro if desired.
- Serve immediately or chill before serving.
