  • ½ tsp apple pie spice (or ½ tsp cinnamon + pinch clove)
  • Pinch of salt

Mix-Ins & Toppings

  • 1 SnapDragon® apple, finely chopped
  • ½ Tbsp chopped walnuts
  • Optional: ¼ tsp coconut or turbinado sugar for topping


Instructions

  1. Melt the Coconut Oil: In a microwave-safe mug, melt the coconut oil by microwaving for about 20 seconds until liquid.
  2. Mix Ingredients: Add the finely chopped apple, almond flour, chopped walnuts, beaten egg, maple syrup, cashew butter, baking powder, apple pie spice, and a pinch of salt to the melted coconut oil in the mug. Stir thoroughly until the batter is well combined.
  3. Microwave Cook: Place the mug in the microwave and cook on high for 1½ to 2 minutes, or until the cake is set and a toothpick inserted comes out clean.
  4. Add Topping and Serve: Sprinkle the optional coconut or turbinado sugar over the top for a crunchy finish. Allow the mug cake to cool slightly before enjoying it warm.
